This slightly sweet and textured bread is made with molasses, ricotta cheese, sour cream and sunflower nuts. Its amazingly moist yet textured consistency makes it a satisfying snack and a healthy idea for breakfast.


  • 1-1/2 cups all-purpose flour
  • 1 cup rye flour
  • 1/4 cup sunflower nuts
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup ricotta cheese
  • 1/2 cup sour cream
  • 3/4 cup apple juice
  • 2 tablespoons molasses


  1. Preheat your oven to 350 degrees and grease a round 9x1-1/2-inch pan with cooking spray or olive oil.
  2. Place the flours, sunflower nuts, baking soda, baking powder and salt into a large bowl and mix well to combine. Add the ricotta cheese, sour cream, apple juice and molasses and continue to stir until the mixture is well-blended.
  3. Transfer the batter to the prepared pan and then place in the oven for 25 minutes or until the top turns golden brown. Let the bread stand for 10 minutes prior to cutting.
