Coconut Cookies have a special ingredient that makes them moist: Instant Potato Flakes.
Ingredients
- 1 stick margarine
- 1 cup sugar
- 2 teaspoons coconut extract
- 1 egg
- 1 cup Bisquick
- 1 cup instant potato flakes, uncooked
Directions
- Cream margarine, sugar and extract. Add egg, mix well. Stir in Bisquick and potato flakes. Chill one hour. Roll into small balls and place on ungreased cookie sheet.
- Bake at 350 degrees F for 8-10 minutes. Remove from oven when slightly brown on edges. Remove from cookie sheet immediately.
