Coconut Cookies have a special ingredient that makes them moist:  Instant Potato Flakes.


  • 1 stick margarine
  • 1 cup sugar
  • 2 teaspoons coconut extract
  • 1 egg
  • 1 cup Bisquick
  • 1 cup instant potato flakes, uncooked


  1. Cream margarine, sugar and extract. Add egg, mix well. Stir in Bisquick and potato flakes. Chill one hour. Roll into small balls and place on ungreased cookie sheet.
  2. Bake at 350 degrees F for 8-10 minutes. Remove from oven when slightly brown on edges. Remove from cookie sheet immediately.
