Mocha Butter Cream Frosting will perk up any cake.
- 1/2 cup butter, softened
- 1 egg yolk
- 1/3 cup cold water
- 2 3/4 cups confectioner's sugar, divided
- 3 teaspoons instant coffee powder
- 3 tablespoons unsweetened cocoa powder
- Beat butter. Add egg yolk, 1 cup of the sugar and the cocoa powder. Dissolve coffee powder in water. Add the coffee mixture to the butter mixture and beat. Add the remaining confectioner's sugar and beat until smooth.
