Serve Minted Grapefruit Leg of Lamb with roasted new potatoes for an elegant meal.
Ingredients
- 1 onion, sliced
- 1 carrot, sliced
- 1 stalk celery, sliced
- 1, 7 pound leg of lamb
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3 cups grapefruit juice
- 1 teaspoon dried mint leaves
Directions
- Arrange vegetables over bottom of roasting pan. Rub lamb with salt and pepper. Place on top of vegetables. Pour grapefruit juice mixed with mint over lamb.
- Bake at 325 degrees F for 2 hours, basting every 15 minutes with pan drippings. Serve with strained pan drippings.
