Low fat honey and mint seasoned carrot side dish.
- 3 cups sliced carrots
- 1 tablespoon honey
- 1 teaspoon fresh or dried mint leaves
- Butter spray
- Add an inch of water to a pot and bring to a boil. Add the carrots in and return to a boil. Cover and reduce the heat. Continue cooking for about 10 minutes, until crisp-tender. Drain.
- Pour the honey, mint and butter over and toss until well coated.
