Sweet and tart mini fruit tacos.
Ingredients
- 1 cup sour cream
- 2 tablespoons sugar
- 1 tablespoon fresh lime juice
- 2 teaspoons grated lime peel
- 24 mini taco shells
- Vegetable cooking spray
- 2 tablespoons sugar
- 4 cups chopped, assorted fruit
Directions
- Blend together the sour cream, 2 tablespoons sugar, lime juice and lime peel. Cover and chill for 30 minutes.
- Preheat the oven to 350 degrees Fahrenheit.
- Arrange the taco shells on a baking sheet. Coat the outside of the shells with the cooking spray and sprinkle with the remaining 2 tablespoons of sugar. Bake for 5 minutes or until lightly browned.
- Allow the shells to cool and then fill with the assorted fruit. Top with the lime cream.
