Sweet and tart mini fruit tacos.


  • 1 cup sour cream
  • 2 tablespoons sugar
  • 1 tablespoon fresh lime juice
  • 2 teaspoons grated lime peel
  • 24 mini taco shells
  • Vegetable cooking spray
  • 2 tablespoons sugar
  • 4 cups chopped, assorted fruit


  1. Blend together the sour cream, 2 tablespoons sugar, lime juice and lime peel. Cover and chill for 30 minutes.
  2. Preheat the oven to 350 degrees Fahrenheit.
  3. Arrange the taco shells on a baking sheet. Coat the outside of the shells with the cooking spray and sprinkle with the remaining 2 tablespoons of sugar. Bake for 5 minutes or until lightly browned.
  4. Allow the shells to cool and then fill with the assorted fruit. Top with the lime cream.
