Mini muffin cups are perfect for bite size Mini Citrus Muffins.

Ingredients

  • 1/2 cup butter
  • 1 1/4 cups sugar
  • 2 eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon orange zest
  • 1 tablespoon lime zest
  • 1/4 cup butter, melted
  • sugar for topping

Directions

  1. Preheat oven to 400 degrees F. Cream butter and sugar. Add eggs and beat until smooth. Stir in sour cream and vanilla. Combine dry ingredients. Stir into creamed mixture. Fold in zests. Spoon into a mini muffin pan that has been lined with mini paper liners, filling half full.
  2. Bake for 18 to 20 minutes. While warm, dip tops into melted butter and roll in sugar. Garnish tops with additional bits of orange and lime zest.
