Mayonaise Cake is moist and filled with tender raisins.

Ingredients

  • 1 cup raisins
  • 1 cup nuts, chopped
  • 1 teaspoon baking soda
  • 2 egg yolks and mayonaise to fill a measuring cup 3/4 full
  • 1 cup sugar
  • 2 cups self rising flour
  • 1 cup boiling water

Directions

  1. Pour boiling water over raisins, add baking soda and let cool. Add remaining ingredients as listed. Bake in 3 greased small cake pans for 25 to 30 minutes at 350 degrees F. When cake is done the layers will have a dark brown color. Frost cooled cake as desired.
