Matzo Ball Soup

A filling, warm soup for winter days.

Ingredients

  • 4 cups chicken broth
  • 2 carrots sliced
  • 2 tablespoons chopped parsley
  • 2 eggs
  • 1/2 cup matzo meal
  • 1/4 cup club soda
  • 2 tablespoons butter
  • 1/2 teaspoon salt

Directions

  1. Matzo Balls
  2. Beat eggs well.
  3. Stir in matzo meal, club soda, butter, salt and a dash of pepper.
  4. Mix till smooth.
  5. cover and chill at least 2 hours.
  6. Soup
  7. In a large saucepan bring broth to boiling.
  8. Add carrots.
  9. Simmer uncovered for 10 minutes.
  10. Drop chilled Matzo Ball dough by rounded tablespoonfuls into simmering broth.
  11. Cover and simmer for 30 minutes.
  12. Sprinkle with parsley and serve.
