A filling, warm soup for winter days.
Ingredients
- 4 cups chicken broth
- 2 carrots sliced
- 2 tablespoons chopped parsley
- 2 eggs
- 1/2 cup matzo meal
- 1/4 cup club soda
- 2 tablespoons butter
- 1/2 teaspoon salt
Directions
- Matzo Balls
- Beat eggs well.
- Stir in matzo meal, club soda, butter, salt and a dash of pepper.
- Mix till smooth.
- cover and chill at least 2 hours.
- Soup
- In a large saucepan bring broth to boiling.
- Add carrots.
- Simmer uncovered for 10 minutes.
- Drop chilled Matzo Ball dough by rounded tablespoonfuls into simmering broth.
- Cover and simmer for 30 minutes.
- Sprinkle with parsley and serve.
