Slow cooked red potatoes and mashed.
- 3 pounds small (2-3 inches) red potatoes, halved
- 4 cloves garlic, minced
- 1/2 cup water
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 cup chives and onions cream cheese, softened
- 1/4-1/2 cup milk
- Mix together the potatoes, garlic, water, olive oil and salt in the slow cooker. Cover and cook on low for 8-10 hours, or high for 4-5 hours, until potatoes are tender.
- Mash with a potato masher or fork, add in cream cheese and milk (to desired consistency). Serve immediately, or you can keep on low for up to 2 hours.
