Toasted marshmallow topped sweet potato pie.

Ingredients

  • 4 sweet potatoes, baked
  • 1/2 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 2/3 cups evaporated milk
  • 15 marshmallows
  • 2 pie shells

Directions

  1. Peel and mash the potatoes. Mix in all the remaining ingredients except the marshmallows.
  2. Preheat oven to 350 degrees Fahrenheit. Pour the mixture into the pie shells and bake until firm.
  3. Top with the marshmallows and bake until a light crust is formed.
