Marlene's Fruit Cake is chock full of goodness. 

Ingredients

  • 2/3 cup shortening
  • 2 cups sugar
  • 4 eggs
  • 1, 1 pound can pineapple, crushed and drained reserve juice
  • 2/3 cup juice from pineapple
  • 1 package mincemeat
  • 1 container candied citrus fruit
  • 3 1/3 cup flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 1 cup nuts, chopped
  • 1 cup raisins, soaked in warm water and drained

Directions

  1. Grease 3 loaf pans.
  2. Cream shortening and sugar, add eggs, pineapple, juice, mincemeat and citrus fruit. Blend in dry ingredients.
  3. Stir in nuts and raisins.
  4. Bake at 350 degrees F for 65-70 minutes or until toothpick comes out clean.
