Marlene's Fruit Cake is chock full of goodness.
Ingredients
- 2/3 cup shortening
- 2 cups sugar
- 4 eggs
- 1, 1 pound can pineapple, crushed and drained reserve juice
- 2/3 cup juice from pineapple
- 1 package mincemeat
- 1 container candied citrus fruit
- 3 1/3 cup flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon cloves
- 1 cup nuts, chopped
- 1 cup raisins, soaked in warm water and drained
Directions
- Grease 3 loaf pans.
- Cream shortening and sugar, add eggs, pineapple, juice, mincemeat and citrus fruit. Blend in dry ingredients.
- Stir in nuts and raisins.
- Bake at 350 degrees F for 65-70 minutes or until toothpick comes out clean.
