Marinated Mushrooms are a favorite at parties and picnics.
Ingredients
- 2 pounds mushrooms
- 2 quarts water
- 1/4 cup lemon juice
- Marinade: 1/4 cup onions, chopped
- 1/4 cup pimento, chopped
- 2 tablespoons parsley
- 2 garlic cloves
- 1/2 cup water
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon oregano leaves
- 1/4 teaspoons pepper
- 1 cup cider vinegar
- 1/2 cup olive oil
Directions
- Boil mushrooms in water with lemon juice. Boil for 1 minute; drain.
- Heat the marinade ingredients to boiling. Pack mushrooms in jars and pour over marinade. Seal and refrigerate up to 2 weeks.
