A classic holiday carrot dish.

Ingredients

  • 1 bunch large carrots
  • 2 cloves garlic, sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup olive oil
  • 2 tablespoons wine vinegar
  • 1 teaspoon oregano

Directions

  1. Peel carrots and cut into thick sliced. Boil carrots in water until tender, mindful not to overcook.
  2. Drain the carrots well. Combine in a bowl with the garlic, salt, pepper, oil, vinegar and oregano. Stir, allow to marinade for 12 hours before serving.
