A classic holiday carrot dish.
Ingredients
- 1 bunch large carrots
- 2 cloves garlic, sliced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup olive oil
- 2 tablespoons wine vinegar
- 1 teaspoon oregano
Directions
- Peel carrots and cut into thick sliced. Boil carrots in water until tender, mindful not to overcook.
- Drain the carrots well. Combine in a bowl with the garlic, salt, pepper, oil, vinegar and oregano. Stir, allow to marinade for 12 hours before serving.
