Ingredients
- 2 cups flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 4 eggs
- 1 cup vegetable oil
- 1/2 cup maple syrup
- 3 cups grated carrots
Directions
- Combine flour, sugar, baking powder, baking soda, cinnamon and salt.
- In a separate bowl, beat eggs, vegetable oil and syrup.
- Blend flour combination into egg mixture.
- Fold in carrots.
- Pour batter into prepared muffin tins.
- Bake at 350 degrees for 20-25 minutes.
