Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 4 eggs
  • 1 cup vegetable oil
  • 1/2 cup maple syrup
  • 3 cups grated carrots

Directions

  1. Combine flour, sugar, baking powder, baking soda, cinnamon and salt.
  2. In a separate bowl, beat eggs, vegetable oil and syrup.
  3. Blend flour combination into egg mixture.
  4. Fold in carrots.
  5. Pour batter into prepared muffin tins.
  6. Bake at 350 degrees for 20-25 minutes.
