Ingredients
- 3/4 cup wheat bran
- 1/2 cup milk
- 1/2 cup maple syrup
- 1 egg, slightly beaten
- 1/4 cup vegetable oil
- 1 1/2 cups whole wheat flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup nuts, chopped
- GLAZE:
- 1 tablespoon butter
- 1/2 cup confectioners' sugar
- 1 tablespoon maple syrup
Directions
- Preheat oven to 400 degrees Fahrenheit. Grease muffin pan.
- Stir together the bran, milk and maple syrup. Beat in the egg and oil.
- Combine the flour, powder, salt and nuts. Add in the bran mixture and stir until moistened.
- Spoon into prepared muffin pan and bake for 18-20 minutes.
- While baking mix together the glaze ingredients. Glaze muffins while still warm.
