Mango Nut Cake is a unique cake baked in a loaf pan.
Ingredients
- 1/2 cup shortening
- 1 cup sugar
- 2 eggs
- 2 cups mashed ripe mangos
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup pecans, chopped
Directions
- Cream shortening; gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition. Add mangos and mix until smooth.
- Combine flour, baking powder, soda and salt; add to creamed mixture, beating on low to moisten. Add pecans beating on low until well mixed.
- Pour batter into greased and floured 9 by 5 by 3 inch loaf pan. Bake at 350 degrees F for 1 hour 15 minutes. Cool in pan 10 minutes. Remove cake to wire rack to complete cooling.
