Mango Nut Bread tastes great with sweet butter. Freezes well.
Ingredients
- 1/2 cup butter
- 2 eggs
- 1 tablespoon lemon juice
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 cup walnuts, chopped
- 3/4 cup sugar
- 1 cup mango, finely chopped
- 2 cups flour
- 1/4 teaspoon salt
- 1/2 cup raisins, chopped
Directions
- Cream together butter and sugar. Beat in eggs. Stir in mango and lemon juice.
- Combine dry ingredients and stir into mango mixture. Add vanilla, nuts and raisins.
- Bake in a greased loaf pan at 375 degrees F for 50 minutes or until wooden skewer comes out of center clean. Cool on wire rack.
