Mango Nut Bread tastes great with sweet butter.  Freezes well.

Ingredients

  • 1/2 cup butter
  • 2 eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 cup walnuts, chopped
  • 3/4 cup sugar
  • 1 cup mango, finely chopped
  • 2 cups flour
  • 1/4 teaspoon salt
  • 1/2 cup raisins, chopped

Directions

  1. Cream together butter and sugar. Beat in eggs. Stir in mango and lemon juice.
  2. Combine dry ingredients and stir into mango mixture. Add vanilla, nuts and raisins.
  3. Bake in a greased loaf pan at 375 degrees F for 50 minutes or until wooden skewer comes out of center clean. Cool on wire rack.
