This modern and eggless version of a classic Hollandaise sauce is made with fresh mango. Drizzle it over roasted, steamed or stir-fried vegetables.


  • 1 small mango
  • 1 small shallot
  • Juice of 1/2 lemon
  • 2 tablespoons olive oil
  • Pinch sea salt
  • Freshly ground black pepper


  1. Place the mango, shallot, olive oil, salt and a few healthy grinds of black pepper into a blender or food processor. Puree the mixture until smooth and creamy, and then serve immediately.
