Mango Bread needs to rest one day before serving to bring out the unique flavor.

Ingredients

  • 1/2 cup butter
  • 3/4 cup sugar
  • 1/2 cup nuts, chopped
  • 2 eggs
  • 2/3 cup raw mango, mashed
  • 2 cups flour, sifted
  • 1 teaspoon baking soda
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt

Directions

  1. Cream butter and sugar, add eggs, mix well. Stir in dry ingredients and mix all together. Add chopped nuts. Bake in loaf pan at 375 degrees F for 1 hour. Do not cut until second day.
