This summertime side dish goes together in minutes. Ideal for serving at potlucks, barbecues or family picnics.

Ingredients

  • 1 (3-ounce) package orange Jell-O, dry
  • 1 (15-ounce) can crushed pineapple, drained
  • 1 (8-ounce) container Cool Whip
  • 1 (12-ounce) container small curd cottage cheese
  • 1 (11-ounce) can mandarin oranges, drained

Directions

  1. Sprinkle dry Jell-O over cottage cheese. Mix in fruit and Cool Whip.
  2. Refrigerate until ready to serve.

I have been making this salad for over 20 years. Our neighborhood had a Memorial Day Cookout every year. This salad is requested and expected. It goes great with smoked ribs and pulled pork.

I could never stand eating just cottage cheese and peaches like some people but this salad is deliciously sweet and is like eating dessert without the guilt.

Love, love this salad. The thought of cottage cheese was not appealing; however, by the time you add everything in, it is delicious. I add chopped pecans on top for something extra. Delicious!
