Made in the Shade Cocktail

For this cocktail a mescal like Sombra should be used; its complex, slightly smoky and citrusy flavor blends exceptionally well with the chile syrup, fresh lime juice, pineapple and cilantro oil.


  • 1-1/2 ounces mezcal
  • 1 ounce chile syrup
  • 1 ounce fresh lime juice
  • 1 ounce pineapple puree
  • 3 drops cilantro oil
  • chipotle salt to rim glass
  • lime wedge
  • lime wheel to garnish


  1. Place some chipotle salt onto a plate. Run a lime wedge around the rim of a glass to moisten and then dip the rim into the salt, pressing gently to adhere. Put the salt-rimmed glass in the freezer for 5 minutes to chill and to allow the salt to set.
  2. Place the remaining ingredients, except for the lime wheel, into a cocktail shaker filled with ice.
  3. Vigorously shake the mixture for 35 seconds and then strain into the prepared cocktail glass.
  4. Garnish the drink with the lime wheel and then serve immediately.
