Ingredients

  • 2 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon baking soda
  • 1 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 cup canned pumpkin
  • 1 egg
  • 2 teaspoons vanilla
  • 2 cups white chocolate chips
  • 1/2 cup chopped macadamia nuts

Directions

  1. Combine flour, cinnamon, ginger and baking soda; set aside.
  2. Beat butter, sugar, brown sugar, pumpkin, egg and vanilla; mix well.
  3. Combine flour combination into pumpkin mixture.
  4. Fold in white chocolate chips and macadamia nuts.
  5. Drop by teaspoon onto greased cookie sheets.
  6. Bake at 350 degrees for 12-15 minutes.
