Great summertime salad.

Ingredients

  • 1 cup sliced fresh mushrooms
  • 1 cup chopped cooked shrimp
  • 1 teaspoon tarragon leaves
  • 1/2 cup Italian dressing
  • 3 ripe avocados, chiled
  • red leaf or romaine lettuce

Directions

  1. Mix together everything but the avocados and lettuce. Refrigerate for 1 hour.
  2. Arrange lettuce on individual plates. Half avocados and add one to each plate filled with the marinated mixture.
