Great summertime salad.
Ingredients
- 1 cup sliced fresh mushrooms
- 1 cup chopped cooked shrimp
- 1 teaspoon tarragon leaves
- 1/2 cup Italian dressing
- 3 ripe avocados, chiled
- red leaf or romaine lettuce
Directions
- Mix together everything but the avocados and lettuce. Refrigerate for 1 hour.
- Arrange lettuce on individual plates. Half avocados and add one to each plate filled with the marinated mixture.
