You won't believe these delicious lemon bars fit into your diet!

Ingredients

  • 3/4 cup almond flour
  • 1/4 cup oat flour
  • 1/2 cup Splenda
  • 1/2 cup softened butter
  • 1/2 teaspoon xanthan gum
  • 2 eggs
  • 1 cup Splenda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons lemon juice

Directions

  1. Preheat oven to 350 degrees F.
  2. Blend flours, 1/2 cup Splenda, butter, and xanthan gum; pat into sprayed 8 x 8-inch pan and bake for 18 minutes, or until lightly browned.
  3. Beat remaining ingredients for 1 minute; pour over baked crust.
  4. Bake for 18 to 20 minutes until set and lightly browned. Cool and cut into 16 squares. Refrigerate.

There's way too much butter in the crust. Mine turned into a soupy gooey mess.
