Low Cal Twice Baked Potatoes are made with cottage cheese.

Ingredients

  • 1 large baking potato
  • 1/4 cup cottage cheese
  • 1/2 teaspoon chives, chopped

Directions

  1. Bake potato at 350 degrees F for 45 minutes. Cut in half and empty insides into bowl. Mix with cottage cheese and refill potato skin. Top with chives.
  2. Return to oven and bake an additional 20 minutes.
