Serve this lobster over a bed of wild rice.
- 1 pound cooked lobster meat
- 1 cup banched, slivered almonds
- 1/2 cup butter, melted
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons chopped parsley
- Cut lobster meat into 1 inch pieces.
- Saute almonds in butter until lightly brown.
- Remove almonds.
- Add lobster meat and saute until lightly browned.
- Add seasonings, parsley and almonds.
