Liver and vegetable with rice bake.
Ingredients
- 1 pound pork liver
- 1/4 cup fat
- 1/2 cup onion, chopped
- 1/2 cup choped green pepper
- 1/2 cup chopped celery
- 2 cups cooked rice
- 1 cup tomato juice
- 1 teaspoon salt
- 1/2 teaspoon pepper
Directions
- Place the liver in boiling water and simmer for 10-12 minutes. Drain and chop into small cubes.
- Brown the liver, onions, pepper and celery in the hot fat. Mix in the rice and tomato juice. Add salt and pepper.
- Cover and bake at 350 degrees Fahrenheit for 1 1/2 hours.
