Liver and vegetable with rice bake.

Ingredients

  • 1 pound pork liver
  • 1/4 cup fat
  • 1/2 cup onion, chopped
  • 1/2 cup choped green pepper
  • 1/2 cup chopped celery
  • 2 cups cooked rice
  • 1 cup tomato juice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  1. Place the liver in boiling water and simmer for 10-12 minutes. Drain and chop into small cubes.
  2. Brown the liver, onions, pepper and celery in the hot fat. Mix in the rice and tomato juice. Add salt and pepper.
  3. Cover and bake at 350 degrees Fahrenheit for 1 1/2 hours.
