Liver and Onion

Simple liver and onion dinner.


  • 2 pounds veal liver
  • salt and pepper to taste
  • 1 onion
  • 1/2 cup flour
  • 1/2 cup water


  1. Chop the liver into 3 inch squares. Add the salt and pepper. Coat with the flour, and fry int he shortening until both sides are golden brown. Remove from skillet.
  2. Using the same skillet fry the onions in the drippings, stirring constantly. Add the liver back into the skillet with the water. Cover and cook for 5 minutes. Do not overcook as the liver will become tough if cooked too long.
