For such a simple meal, the tastes are rich and delicious. Make sure you clean the leeks well to remove all the dirt and grit.

Ingredients

  • 8 ounces linguini
  • 4 tablespoons butter
  • 2 medium leeks, white and light green parts only, cleaned and quartered lengthwise and cut into 2" strips
  • 2 tablespoons fresh lemon juice
  • 2 ounces thinly sliced prosciutto, cut into thin strips

Directions

  1. Cook the linguine as instructed on the package directions.
  2. Meanwhile, in a large sauté pan, heat 1 tablespoon butter and sauté the leeks for about 6-7 minutes and sprinkle with salt and pepper.

  4. When the pasta is finished boiling, reserve 1/4 cup of pasta water and then drain the pasta.
  5. Transfer the pasta to the sauté pan with the leeks and add the lemon juice and remaining butter. Season with salt and pepper and then slowly pour in the reserved pasta water. Toss to coat and then add the prosciutto and toss. Serve immediately sprinkled with Parmesan cheese.
