Ingredients
- 3 cups chopped parsnips
- 4 carrots, chopped
- 1 large onion, chopped
- 1 1/2 cups dry Lima beans
- 5 cups water
- 1 pounds ham shanks
- 3 cloves garlic, minced
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/8 tsp. hot pepper sauce (optional)
Directions
- Place parsnips, carrots and onion in crock pot.
- Top with beans.
- Add water, ham, garlic, salt, pepper and hot pepper sauce.
- Cover and cook on high for 6-7 hours or until beans are tender.
- Remove meat and bones when cool enough to handle.
- Cut meat into bite-size pieces and return to crock pot.
- Cook another 30 minutes.
