Lima Bean Soup

The hot pepper sauce is optional.

Ingredients

  • 3 cups chopped parsnips
  • 4 carrots, chopped
  • 1 large onion, chopped
  • 1 1/2 cups dry Lima beans
  • 5 cups water
  • 1 pounds ham shanks
  • 3 cloves garlic, minced
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/8 tsp. hot pepper sauce (optional)

Directions

  1. Place parsnips, carrots and onion in crock pot.
  2. Top with beans.
  3. Add water, ham, garlic, salt, pepper and hot pepper sauce.
  4. Cover and cook on high for 6-7 hours or until beans are tender.
  5. Remove meat and bones when cool enough to handle.
  6. Cut meat into bite-size pieces and return to crock pot.
  7. Cook another 30 minutes.
