Light Potato Salad is full of vegetables and topped with a creamy yogurt dressing.

Ingredients

  • 4 cups potatoes, cooked and diced
  • 2/3 cup celery, chopped fine
  • 1/2 cup radishes, sliced
  • 1/2 cup green onions, sliced
  • 1/4 cup sweet pickle relish
  • 1 teaspoon celery seed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/3 cup plain yogurt
  • 1/3 cup reduced fat mayonaise
  • 3 teaspoons prepared mustard

Directions

  1. Mix potatoes, celery, radishes, onions, relish, celery seed, salt and pepper in large bowl.
  2. Mix yogurt, mayonaise and mustard. Pour over potato mixture; toss. Cover and refrigerate at least 1 hour or until chilled.
