Lettuce and Endive Salad with Avocado Dressing is perfect for a light, elegant lunch.

Ingredients

  • 2 large heads Bibb lettuce
  • 1 small head Boston lettuce
  • 2 large Belgian endives
  • 1/2 bunch watercress
  • 1, 6 ounce bag radishes, sliced
  • 1 ripe medium avocado
  • 1/3 cup milk
  • 3 tablespoons white wine vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons mayonnaise
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/8 teaspoon tarragon leaves

Directions

  1. Into large bowl, tear lettuce into bite-sized pieces. Separate endives into leaves; cut large leaves in half. Add endives, watercress and radishes to lettuce in bowl.
  2. Prepare dressing: Remove peel and pit from avocado; cut avocado into chunks. In blender or food processor, blend avocado, milk, white wine vinegar, oil, mayonnaise, salt, sugar and tarragon until smooth. Toss salad gently with dressing to coat.
