  • 2 cups flour

  • 2 teaspoons grated lemon peel

  • 1 cup grated zucchini
  • 3/4 cup milk
  • 3 tablespoons vegetable oil
  • 1 egg

Directions

  1. Combine flour, sugar, baking powder, lemon peel, salt and nutmeg.
  2. In a separate bowl, mix together zucchini, milk, vegetable oil and egg.
  3. Blend flour combination into egg mixture.
  4. Pour batter into greased muffin tins.
