Adding lemon zest to a fresh lemon juice vinaigrette, adds additional aroma, color and lemony flavor. Toss this dressing with cooked, mixed vegetables or a simple green garden salad.


  • 1/4 cup fresh lemon juice
  • Zest from 1 lemon
  • 1/2 cup olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic, pressed or mashed
  • 1 tablespoon water


  1. Place all of the ingredients into a small bowl and whisk vigorously until the mixture is thoroughly blended. Serve immediately.
