Adding lemon zest to a fresh lemon juice vinaigrette, adds additional aroma, color and lemony flavor. Toss this dressing with cooked, mixed vegetables or a simple green garden salad.
Ingredients
- 1/4 cup fresh lemon juice
- Zest from 1 lemon
- 1/2 cup olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon Dijon mustard
- 1 clove garlic, pressed or mashed
- 1 tablespoon water
Directions
- Place all of the ingredients into a small bowl and whisk vigorously until the mixture is thoroughly blended. Serve immediately.
