Super simple to make, Lemon Spaghetti is what to fix when you think you have nothing at home to cook. We like spaghetti best, but use whatever pasta you have. If you have extras around the house like olives or arugula, toss them into the warm, cooked pasta.
- 12 ounces spaghetti
- 1 large lemon, juiced
- 2 cloves garlic, cut into thin slivers
- 6 tablespoons extra virgin olive oil
- Salt & pepper to taste
- Cook the pasta in a pan of lightly salted water, according to package directions. Drain the pasta and return to the pan.
- Pour the olive oil and lemon juice over the cooked pasta. Sprinkle with the garlic slivers and season with salt & pepper to taste. Toss the pasta and keep the pan on medium to high heat for 2 minutes. Serve immediately. If you have extras like olives or arugula, toss them in while the pasta is warming.
