This delicate and citrusy vinaigrette works well drizzled over steamed or grilled vegetables.


  • 1-1/2 tablespoons olive oil
  • Juice and zest of 1 lemon
  • 1 shallot, finely diced
  • 2 tablespoons extra-virgin olive oil
  • Sea salt and freshly ground black pepper


  1. In a small bowl, whisk together the lemon zest and the shallot until combined.
  2. Slowly add the olive oil, whisking vigorously until thoroughly blended. Add 2 pinches of salt and pepper, mix and serve immediately.
