This salad is a palette-cleansing accompaniment to grilled meats. To remove the bitterness from fresh lemon, soak the slices in water for 30 minutes.


  • 2 large lemons
  • 2 small onions, chopped
  • Mint, chopped
  • 1/2 chili, chopped
  • 1 tablespoon olive oil
  • Sea salt


  1. Peel the lemons and then halve and quarter. Chop the quartered lemon into small pieces and then place into a bowl filled with water. Set aside for 30 minutes to soak.
  2. Place the onions, mint and chili into a bowl and toss to combine.
  3. Rinse off the lemons and gently squeeze out the water being careful not to crush. Place the soaked lemon into the bowl with the onion mixture, add the olive oil and a few pinches of salt, and toss once again to combine.
