Lemon and garlic seasoned low-fat pork roast dinner.


  • 1 (3 pound) lean boneless pork loin roast, fat trimmed
  • 3/4 teaspoon grated lemon rind
  • 3 garlic cloves, minced
  • 1 can low-salt chicken broth


  1. Mix together the lemon rind and garlic, rub into the pork. Arrange in a casserole dish and pour the broth in. Bake at 400 degrees Fahrenheit for 30 minutes. Flip the pork, and bake for 35 more minutes. Drain the broth then serve.
