Make Lemon Curd ahead and store in the refrigerator.  Spread it on toast or use it as a glaze for cakes and cupcakes.


  • 4 cups sugar
  • 6 eggs, beaten
  • 2 1/2 cups lemon juice


  1. Mix ingredients and cook in double boiler until thick, stirring often. Pour into small jars and keep refrigerated.
