This zesty coffee cake serves well alongside any breakfast dish, especially with a hot cup of coffee.

Ingredients

  • 1 cup flour
  • 1/2 cup sugar
  • 1-1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1/2 cup lemon juice
  • 1/4 cup butter, melted
  • 2 teaspoons grated lemon peel
  • 1/4 cup butter, melted
  • 1 tablespoon lemon juice
  • 1/4 cup sugar

Directions

  1. Combine flour, 1/2 cup sugar, baking powder and salt; set aside.
  2. Beat eggs, lemon juice, 1/4 cup butter and lemon zest.
  3. Blend flour combination into lemon mixture.
  4. Pour batter into greased 8x8 baking dish.
  5. Bake at 375 degrees for 20-25 minutes.
  6. In a small bowl, combine remaining butter and lemon juice; brush over top of cake then lightly sprinkle with sugar.
