This zesty coffee cake serves well alongside any breakfast dish, especially with a hot cup of coffee.
Ingredients
- 1 cup flour
- 1/2 cup sugar
- 1-1/2 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs
- 1/2 cup lemon juice
- 1/4 cup butter, melted
- 2 teaspoons grated lemon peel
- 1/4 cup butter, melted
- 1 tablespoon lemon juice
- 1/4 cup sugar
Directions
- Combine flour, 1/2 cup sugar, baking powder and salt; set aside.
- Beat eggs, lemon juice, 1/4 cup butter and lemon zest.
- Blend flour combination into lemon mixture.
- Pour batter into greased 8x8 baking dish.
- Bake at 375 degrees for 20-25 minutes.
- In a small bowl, combine remaining butter and lemon juice; brush over top of cake then lightly sprinkle with sugar.
