Slow cooked lemon roasted chicken.
- 3-4 pounds roasting chicken
- 3 tablespoons butter
- Juice of 1 lemon
- 2 teaspoons grated lemon peel
- 1/2 teaspoon salt
- Clean and pat dry the chicken then place in the slow cooker. Rub the chicken with the butter and pour the lemon juice over. Sprinkle the peel and salt on top.
- Cover and cook on low for 8-10 hours.
