Lemon Butter Cream Frosting will generously cover a 2 layer cake.
- 1/2 cup butter, softened
- 3 tablespoons lemon juice
- 1 package confectioner's sugar, sifted
- 1/2 teaspoon lemon rind, grated
- dash of salt
- 1 tablespoon milk
- Beat butter until creamy. Add sugar alternatively with lemon rind, salt, lemon juice and milk. Continue beating until smooth and spreadable.
