Ingredients

  • 2 cups flour
  • 1/2 cup sugar
  • 1/2 cup powdered milk
  • 2-1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon rind, finely grated
  • 2/3 cup lemon-flavored yogurt
  • 3/4 cup milk
  • 4 tablespoons butter, melted
  • 2 eggs
  • 1 cup blueberries
  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/4 cup butter
  • 1/2 teaspoon cinnamon

Directions

  1. Combine 2 cups flour, 1/2 cup sugar, powdered milk, baking powder, baking soda and salt; set aside.
  2. Mix together lemon juice, lemon rind, yogurt, milk, 4 tablespoons butter and eggs.
  3. Blend flour combination into lemon mixture.
  4. Fold in blueberries.
  5. Pour batter into a greased 8x8 baking dish.
  6. Mix together remaining cinnamon, flour, sugar and butter until mixture becomes crumbly; sprinkle over top of cake batter.
  7. Bake at 400 degrees for 20-25 minutes.
