Lemon Bisque is a tangy dessert layered with vanilla wafers.


  • 1 can evaporated milk
  • 1 small package lemon flavored gelatin
  • 1 1/4 cups boiling water
  • 1/3 cup honey
  • 1/8 teaspoon salt
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon rind
  • 2 1/2 cups vanilla wafer crumbs


  1. Chill milk in freezer. Dissolve gelatin in boiling water; add honey, salt, lemon juice and rind. When slightly congealed, beat chilled milk until stiff. Whip gelatin mixture into it. Sprinkle 1/2 of the wafer crumbs into the bottom of a 8 inch square baking pan. Pour lemon mixture over it. Tope with the rest of the wafer crumbs. Refrigerate.
