Fresh lemon juice, grated lemon zest and thick and creamy Greek yogurt make a delicious dip for vegetables, spicy pita chips or even kabobs.
- Salt and freshly ground pepper
- 1 cup plain Greek yogurt
- 1 teaspoon finely grated lemon zest plus extra to garnish
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- Combine the yogurt, lemon zest, lemon juice, garlic and 1 tablespoon of oil into a bowl. Add a pinch of salt and pepper to taste and then vigorously stir to combine. Place in the refrigerator for at least 1 hour to allow the flavors to blend and then serve.
