Lemon and Walnut Tea Bread

This bread is ideal for sharing with friends and family over tea or coffee.

Ingredients

  • 1/2 cup butter
  • 1/2 cup sugar
  • 2 eggs
  • 2 lemons, rinds grated
  • 2 tablespoons lemon juice
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 cup milk
  • 1/2 cup chopped walnuts
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 350 degrees. Grease loaf pan.
  2. Mix together butter and sugar until creamy.
  3. Beat egg yolks, add lemon rinds and juice; mix well and add to butter mixture.
  4. In a separate bowl, combine flour and baking powder. Fold into butter mixture with milk.
  5. Add walnuts.
  6. In a separate bowl, beat egg whites and salt until stiff. Fold in egg whites by large spoonfuls to walnut mixture until just blended.
  7. Pour batter into loaf pan.
  8. Bake at 350 degrees for 45-50 minutes.
