This bread is ideal for sharing with friends and family over tea or coffee.
Ingredients
- 1/2 cup butter
- 1/2 cup sugar
- 2 eggs
- 2 lemons, rinds grated
- 2 tablespoons lemon juice
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 cup milk
- 1/2 cup chopped walnuts
- 1/4 teaspoon salt
Directions
- Preheat oven to 350 degrees. Grease loaf pan.
- Mix together butter and sugar until creamy.
- Beat egg yolks, add lemon rinds and juice; mix well and add to butter mixture.
- In a separate bowl, combine flour and baking powder. Fold into butter mixture with milk.
- Add walnuts.
- In a separate bowl, beat egg whites and salt until stiff. Fold in egg whites by large spoonfuls to walnut mixture until just blended.
- Pour batter into loaf pan.
- Bake at 350 degrees for 45-50 minutes.
