A healthy chicken entree that you can serve for a family dinner or to your boss. Delicious and easy.


  • 4 thin boneless, skinless chicken breasts
  • course salt and pepper
  • 4 teaspoons whole wheat flour
  • 1 tablespoon olive oil
  • 1 medium shallot (minced)
  • 2 tablespoons capers (drained and rinsed)
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • 2 tablespoons parsley (minced)
  • lemon zest


  1. Season the chicken with salt and pepper
  2. Coat with flour
  3. Heat oil in skillet at medium-high heat
  4. Cook chicken until browned and cooked through
  5. Put chicken on a plate and keep warm
  6. Add shallot and lemon juice to pan and cook until thickened
  7. Add parsley and then immediately pour sauce over chicken
  8. Garnish with lemon zest
