Tender Lamb Kabobs are a treat for meat lovers.
Ingredients
- 1 pound lamb cubes for kabobs
- 1/2 cup dry red wine
- 2 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon oregano leaves
- 1/8 teaspoon pepper
- 1 garlic clove, crushed
- 1 large green pepper
- 1 medium onion
- 1, 4 ounce jar pimentos, divided
- 1/2 pound medium mushrooms
Directions
- In medium bowl, mix first 7 ingredients; set aside.
- Cut green pepper into 1 1/2 inch pieces. Cut onion into quarters, then separate each quarter into pieces. Cut pimentos into 1 1/2 inch pieces. Cut mushroom in half, if they are large.
- Preheat broiler. On four 14 inch metal skewers, alternately thread lamb and vegetables, reserving marinade. Place skewers on rack in broiling pan; brush with marinade. Broil 20 minutes, turning skewers occasionally and brushing with marinade.
