Tender Lamb Kabobs are a treat for meat lovers.

Ingredients

  • 1 pound lamb cubes for kabobs
  • 1/2 cup dry red wine
  • 2 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon oregano leaves
  • 1/8 teaspoon pepper
  • 1 garlic clove, crushed
  • 1 large green pepper
  • 1 medium onion
  • 1, 4 ounce jar pimentos, divided
  • 1/2 pound medium mushrooms

Directions

  1. In medium bowl, mix first 7 ingredients; set aside.
  2. Cut green pepper into 1 1/2 inch pieces. Cut onion into quarters, then separate each quarter into pieces. Cut pimentos into 1 1/2 inch pieces. Cut mushroom in half, if they are large.
  3. Preheat broiler. On four 14 inch metal skewers, alternately thread lamb and vegetables, reserving marinade. Place skewers on rack in broiling pan; brush with marinade. Broil 20 minutes, turning skewers occasionally and brushing with marinade.
