Kansas Style Scalloped Corn is a great side dish and the ultimate comfort food.
Ingredients
- 1, 12 ounce can whole kernel corn
- 3/4 cup evaporated milk
- 2 tablespoons butter
- 2 tablespoons flour
- 1 teaspoon salt
- dash pepper
- 2 eggs, beaten
- 1/2 cup bread crumbs
- paprika for topping
Directions
- Drain liquid from canned corn into measuring cup. To this add evaporated milk to make 1 cup.
- Melt butter over low heat. Add flour, salt and pepper. Sitr until smooth. Add liquid gradually. Cook until thick, stirring constantly.
- Add corn mixed with beaten eggs. Pour into buttered 1 quart casserole. Sprinkle top with bread crumbs. Place dish in shallow pan filled with hot water. Bake at 300 degrees F for 45-50 minutes.
